Today’s Cooking & Eating Adventure
Here are some of the soups I’ve made over the past few weeks. I absolutely love making and enjoying soup during the winter—it’s the perfect comfort food to warm you up on cold days. For each of these soups, we paired them with rice, which added an extra layer of texture and made the soups even more filling and delicious.
Blackeyed Pea, Kale Soup – favorite oil, shallots, garlic, veggie broth, carrots, celery, blackeyed peas, Italian seasoning, nutritional yeast.
Greenbean, Chickpea, Tomato Soup – favorite oil, shallots, garlic, celery, mushrooms, veggie broth, bay leaves, rosemary, garbanzo beans.
Red Lentils Coconut Milk Soup – favorite oil, shallots, garlic, celery, mushrooms, veggie broth, red lentils, carrots, kale, cabbage, coconut milk, salt, pepper, Cajan Seasoning, salt, pepper.
Thai Green Curry with lots of veggies – favorite oil, shallots, garlic, celery, veggie broth, asparagus, carrots, yellow peppers, bean sprouts, celery, coconut milk, green curry paste (best) or powder.
